Ingredients:
- 1 lb chicken breast, sliced
- 8 small tortillas
- 1 avocado, diced
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded and diced
- 1 lime, cut into wedges
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/4 cup sour cream (optional)
- Hot sauce (optional)
Instructions:
- In a small bowl, mix together olive oil, minced garlic, cumin, chili powder, paprika, salt, black pepper, and cayenne pepper.
- Place sliced chicken breast in a large ziplock bag and pour the marinade over it. Seal the bag and massage the marinade into the chicken. Let it marinate in the fridge for at least 30 minutes or up to 2 hours.
- Preheat grill to medium-high heat.
- Remove chicken from the marinade and discard excess marinade. Grill chicken for 6-8 minutes on each side, or until cooked through.
- While the chicken is grilling, heat up the tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing the grilled chicken on the tortillas and topping with diced avocado, tomatoes, red onion, cilantro, and jalapeno. Squeeze a lime wedge over each taco.
- Optional: Serve with a dollop of sour cream and hot sauce on top for added creaminess and heat.
