Ingredients:
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 1 cup of water
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 cup of chopped kale
- 1 cup of cooked quinoa
- Fresh parsley, for garnish
Instructions:
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic and cook for 2-3 minutes until softened.
- Add the diced carrots, celery, zucchini, and red bell pepper to the pot. Stir and cook for another 5 minutes.
- Pour in the can of diced tomatoes, vegetable broth, and water. Add the dried thyme, oregano, and season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Add the chopped kale and cooked quinoa to the pot. Stir and let it cook for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with some fresh parsley.
