Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
- 8 small tortillas
- Optional toppings: avocado, salsa, shredded cheese, cilantro, lime wedges
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the diced sweet potatoes, black beans, red bell pepper, onion, garlic, olive oil, chili powder, cumin, salt, and pepper. Toss everything together until the sweet potatoes and beans are evenly coated with the spices.
- Spread the mixture onto a baking sheet lined with parchment paper. Roast in the oven for 20-25 minutes, stirring halfway through, until the sweet potatoes are tender and lightly browned.
- Warm the tortillas in a pan or in the microwave.
- Assemble the tacos by filling each tortilla with a generous scoop of the roasted sweet potato and black bean mixture.
- Top with your desired toppings, such as avocado, salsa, shredded cheese, cilantro, and a squeeze of lime juice.
